I haven't shared a recipe in awhile so I decided it was high time to do so! Plus this is a recipe I was sure I had posted before but when I went looking for it on my blog I couldn't find it on the list.
Now, I know that everyone has a potato salad that they feel is the best but, guess what? I think mine is the best! It is actually a spin off of a recipe my sister-in-law Debby used to make, I tweak it to be just what we liked and it remains a favorite to this day. I think it originally started out has a warm German potato salad recipe and morphed into an American cold version but that could just be in my head. HA!
Potato Salad
8 potatoes, peeled, diced
4-5 eggs, hard boiled and sliced
1 pound of bacon, cooked and crumbled
salt and peper to taste
Dressing:
1 1/2 cups of Mayo
1/4 cup of sugar
1/4 cup of Italian dressing
Cook the diced potatoes just until fork tender. Combine the eggs, potatoes, and bacon in a large bowl. Add salt and pepper.
Mix the three dressing ingreadients in a small bowl
Pour the dressing over the potato mixture while the potato's are still warm. Mix well. Place in a covered bowl in the refrigerator. These are best served the next day but can be served while it is still warm as well.
** I stir mine a few times as it sits in the fridge in order to mix up the dressing well and combine flavors.
