Weekly Menu

This past week was busy.  I was gone every night with either a kid activity or something for myself.  I'm thankful for a quiet Friday evening at home!  Next week appears to be a little quieter but we are still on the go both Monday and Tuesday.  Guitar lessons end soon so that will help slow things down a little.

Friday -  Taco Bell (For Cinco de Mayo)

Saturday - Dinner at my moms

Sunday - Something on the grill after church (depends on what is one sale) and French Fries because they are quick and easy.

Monday - BBQ Cups and chips and dip

Tuesday - Leaving stuff for Tacos for my guys as I'm heading to dinner with ladies from church.

Wednesday - Spaghetti and Garlic Bread.  This is a carry over from last week.

Thursday - Ham, Mac and Cheese, and fried zucchini.  This has become a very favorite meal. :-)

Weekly Menu

Last week was one of those weeks where menu planning didn't go as planned.  We ate a lot of left overs from Chili and Pulled Pork but otherwise I didn't actually cook a lot.  It was a week with lots of running between Choir and music lessons so we ate in shifts.  With that in mind I have a few carry overs to this week which helps when it comes to grocery shopping!

Friday - Sliced Ham, Mac and Cheese, and a salad.  (I love buying sliced, pre-cook ham steaks to make an easy Friday night dinner.  Ham goes so well with homemade mac and cheese!)

Saturday - Dinner with my mom :-)  It's been a few weeks since we've had a normal Saturday night dinner at house between Easter and other activities.

Sunday - Slow Cooker Zuppa Tuscana and French Bread Rolls.  My slow cooker is my favorite on Sundays.  It allows us to eat as soon as we get home without much prep left to do.

Monday -  Beef with Snow Peas and Fried Rice.  This is a carry over from last week.  Nate has oral surgery today so we are actually all home on a Monday evening (No TKD or Choir).

Tuesday - Taco Shells and Cheese and a Salad.  I've decided to once again try to cook through some cook books.  This recipe comes from The Pioneer Woman Super Easy Cookbook.

Wednesday - Buttermilk oven fried chicken, seasoned sweet potato wedges, and confetti slaw (These recipes all come from The Skinnytaste Cookbook - Light on Calories, big on Flavor)

Thursday - Tonight is the community dinner that my guys help at with our church so I usually eat there before it's time for them to leave.

Weekly Menu

Spring has sprung around here!  At least for this week :-)  It is April  though so we could get snow before the month ends!  Here's our plan for the coming week.

Friday - Pulled Pork Tacos with  cole slaw and chili cheese dip

Saturday - We are heading to a Matthew West concert so we will eat dinner on the way

Sunday - Chili and Fritos.

Monday - Between Choir and Tae Kwon Do Monday nights are a little tight for dinner!  The plan is leftovers.  There will be both pulled pork and Chili left so everyone can pick what they would like for dinner.

Tuesday - With music lessons back to back on Tuesdays - I'm running so it's a little rushed for dinner but we try to squeeze it in - or at least have something everyone can grab on their own.  I plan to have stuff for wraps/tacos.

Wednesday - Beef and Snow Pea Stir Fry with Fried Rice

Thursday - Baked Teriyaki Chicken legs, Homemade Mac and Cheese, and Spinach Salad with apples, feta and bacon.
