Weekly Menu - January is done

 2023 is flying HA!  January is already done :-)  Things pick up a little this week with our co-op on Friday.  Plus my guys will be gone at a winter retreat this weekend. 

Friday - Pork Lo Mein with carrots and scallions (Dinnerly)  I'll be honest - first day of homeschool co-op + sending my guys off to camp means a very busy day.  I'm not sure if dinner will actually be this or if we will grab take out.  I might be "done" by the time I get home. 

Saturday - Darryl and I are going to enjoy a date day with some shopping, dinner and, who knows, maybe a movie

Sunday - There are a few options today depending on when my guys are expected home.  We might stay in town and eat lunch while we wait; maybe go home and cook the Pork Lo Mein; maybe grab take out and go home.  I'm flexible :-) 

Monday - I think I might have a dinnerly menu or two that are hold overs from last week so I plan to cook that up.  If not I will just make some baked tacos.

Weekly Menu

 I'm enjoying our quieter weeks.  It is part of what I enjoy so much about winter.  We are snuggled in and just enjoying being home and not feeling so rushed.  It also makes cooking a little more enjoyable. 

Friday - This is our last Friday before Co-op gets started so I think I'll actually cook!  Homemade Lasagna, green beans, and Garlic Bread

Saturday - Joshua and Nate, along with other friends from a Co-op, are doing a community service project working a pancake dinner so that is where we will eat too!

Sunday - Beef Tips and Noodles.  I'm really liking having Sunday Lunch cooking in the crock pot while we are at church.  It makes it so much easier to walk in the door and eat when it is already done!  

Monday - Sausage and Tortellini Soup and French Bread

Tuesday - Sauce Skillet Chicken with broccoli and egg noodles (Dinnerly)

Wednesday - Josh and Nate have youth group and eat there. 

Thursday - Katzu-Glazed Turkey Meatloaves with mashed sweet potatoes (Dinnerly) for the guys and I am going out to dinner with my Sunday School Class.

Weekly Menu

 This will be week 2 of Dinnerly.  This year I'm trying to be more selective in the recipes to make sure we will actually use them.  I'm also looking at a variety - last year it seemed like the recipes were all the same and not that enjoyable.  

Friday - Tonight is our make-up Presentation Night which was supposed to be in November but was delayed due to a snow storm.  We will eat there. 

Saturday - Dinner at my mom's 

Sunday - Chili and Fritos.  This is a favorite after church dinner as it is ready when we get home - no waiting! 

Monday - Baked Tacos and a Salad

Tuesday - Shrimp Fajita Bowl with rice and sour cream (Dinnerly)

Wednesday - Baked POpcorn Chicken, smashed potatoes and green beans (Dinnerly)

Thursday - Steak Frites (Dinnerly)

Weekly Menu

 This month is surprisingly busy.  Not in a bad way it's just that we have more things on the calendar already then we normally do in January.  Part of this is because things that normally happen in November or December got moved to January due to weather and/or time.  Plus all of the "things" start up again - lessons, youth groups, and Homeschool things.  This week will reflect a little of those things! 

Friday - Nate's birthday party!  Since his birthday is so close to Christmas, his party always gets pushed into January.  He is having a few friends over so I'm sure dinner will be Chicken Nuggets and Fries.  :-) 

Saturday - Dinner at my moms.  It is nice to get back into this routine once again. 

Sunday - One last Christmas!  We are having Christmas with Darryl's family today as it is the only date that worked for everyone. 

Monday - Stuffed Shells, Salad and Garlic Bread

Tuesday - One of the benefits of the on-line school option is that now get about 6 weeks of free meals from Dinnerly.  We got this last year and it was a nice thing through the winter months.  My first delivery starts "Today" (Tuesday).  So, tonight will be Pulled Pork Tacos with corn and red onion salsa

Wednesday - Youth group begins again.  Josh and Nate will eat there; I'll leave soup for Darryl and I'm grab something simple while waiting for them to be done. 

Thursday - Seared Steak with scalloped potatoes (Dinnerly) 

Because of scheduling the next few days I'm actually going to make the third "dinner" for lunch on Thursday and will also eat it on Friday. So it is King Pao Chicken over Rice.

Weekly Menu - Hello 2023

 Good-bye 2022; Hello 2023.  Nothing else needs to be said!  

Friday - Chicken Alfredo Fettuccini and Garlic Bread

Saturday - New Year's Eve!  I'm planning soup and French bread for a late lunch with my mom; we will also have some simple snacks like cheese and crackers, Spinach Dip, I'll add to those snacks throughout the evening with bacon roll-ups, crescent wrapped sausages, and shrimp cocktail.  

Sunday - New Year's Day!  We are heading to my mom's to celebrate today. 

Monday -  And now it is January 2nd and I'm already tired of cooking for the year HA! I'm going super simple tonight and making Slow Cooker Beef  Ragu over pasta with green beans and garlic bread

Tuesday - I think there will be ham left from Sunday (and I think my mom will send some home maybe!!) so I'm planning ham and scalloped potatoes along with a salad 

Wednesday - Using up some leftovers in the freezer I plan to make pulled pork quesadillas with chips and salsa 

Thursday - Joshua and Nate will be helping serve at the community dinner with their youth group so I'll have dinner there before it's over and I pick them up.  I'll leave soup for Darryl at home. 


The key this week is keeping it all simple and using up leftovers and items in the freezer.  I used to be lazier with leftovers but as groceries prices have risen I have worked much harder at using things up that we have on hand before I buy more and things get wasted.

Weekly Menu - It's Christmas Time!

 And just like that it is Christmas time.  I try to slow down these few days surrounding the holiday and take it all in as once it is over we settle into the long months of winter.  

Here's the plan for the coming week:

Friday - Lasagna (homemade!), Salad and Garlic Bread

Saturday - It is Christmas Eve!  Our tradition now is to go to my mom's on Christmas Eve and she hosts us beautifully.  It is so peaceful and warm and Christmasy.  It is one of my favorite nights of the year. 

Sunday - Christmas Day!  Our tradition is that my mom comes to our house (it is sure nice to have her 10 minutes away) for Christmas Breakfast and Christmas Dinner.  Our breakfast is Ham and Cheese Quiche, Sausage Balls, Cinnamon Rolls, Fruit Salad, and Orange Julius.  Then for dinner the current plan is Stuffed Pork Tenderloin, Homemade Mac and Cheese, Sweet Potato Casserole, Ceasar Salad, Holiday Jell-O, and Roasted Green Beans. Plus some desserts of course! 

Monday - There "should" be leftovers for dinner tonight.  

Tuesday - Waffles and Sausage

Wednesday - Turkey Nachos and Salad

Thursday - Hamburger Stroganoff, Noodles, and green beans.

Weekly Menu

 Can you believe that Christmas is just about a week away?  I'm not sure what it is this year but it just doesn't feel like it is that close!  

Here's are super simple plan for the next week

Friday - Homemade Pizza and Salad

Saturday - We are having a late lunch at my mom's before heading to a concert. 

Sunday - I have my choir concert and we are being treated to dinner today! 

Monday - Chicken Tacos 

Tuesday - Chick-Fil-Lay Nuggets and Fries

Wednesday - My guys have a youth group party (it was post poned from last week) so they will eat there. 

Thursday - Today is Nate's birthday so he gets to choose!!!
