Weekly Menu

 How can it be August!  I feel like the summer has just flown by and I just want to make it slow down!  I am not ready to start thinking about school and schedules quite yet! 



Here’s the plan : 

Friday - Chili dogs and Corn on the Cob

Saturday - Nate is going to a teen activity so I’m not quite sure how timing will work - I may drop  him off and go see a movie! 

Sunday - my plan is that Darryl and I can take off for the day for our anniversary!! 

Monday - My guys band is playing in a talent show at a local fair and I’m part of the “transport team” (in other words —I’m hauling gear 🤣) so I am hoping to indulge in my one elephant ear a year for dinner!! 

Tuesday - it’s our anniversary and I’m not cooking! 

Wednesday - tacos

Thursday - BBQ grilled chicken, fried potatoes and green beans

A few of my favorite things

 It’s been awhile since I shared some of my favorite things!  



Giraffes!!  The boys and I went to a local zoo and I spent quality time with the giraffes 😊

I love this spinning fidget ring! 

My new favorite- It’s Cherry Lime Sprite Zero! 

I enjoy a good renovation show and these two guys are favorite hosts! 
This guy.  I picked him up on the same zoo trip 😊
I love that little Shazam widget that Nate taught me about!  If I head a song on the radio, I just click on that and it identifies it!  How cool is that!

Our Weekly Snapshot

 Here’s a look back at our week: 


On Sunday I dropped Nate off for his last week to work at camp!  

Josh had to visit the Orthopedic doctor for a wrist injury - which at this point requires PT. 

And then he got to pick dinner since we were in Grand Rapids!  He picked Five Guys 😊

Sunday - crock pot fajitas 

Monday - Pork loin and Mac and Cheese 

Tuesday - Chick-fil- a nuggets and fries

Wednesday - this is a night everyone kinda fends for themselves due to running teens places like youth group!

Recipe Fun - Triple Berry Crisp

 I think that any type of crisp or cobbler are some of my all time favorite desserts.  This particular recipe I came across a few years ago and just fell in love with it!  One, it is so easy to put together and two, it tastes amazing.  The full recipe for Triple Berry Crisp can be found HEREand is a Skinnytaste Recipe.  



I do make some adjustments.  I always add more fruit - I use one container of raspberries, one of blueberries, and one of strawberries (by container I mean those plastic ones in the grocery story that the fruit comes in - just the normal every day size HA!).  For the crisp topping I always use 1/4 of butter and 1/4 of brown sugar which is more than the recipe calls for but it sure tastes good!

Our Weekly Snapshot

 Here’s a look back at our week: 

On Saturday, Nate came home from Lincoln Lake! He had a great week. 

Then we attended an open house for our friend, Garrett. 

On Sunday I met up with my book club - we don’t actually read anything because we only get together once a year when everyone is in town! 

Next it was time for camp at Michawana! 





Boy was it hot this week.  Those feels like temps were rough! 


The heat was followed by some pretty Smokey skies! 






On Friday I picked my guys up from another great week of camp!

Weekly Menu

 A few weeks ago I asked each person in my family to give me a list of their five favorite meals and one thing they would like to never eat again, 🤣. I’m now planning my menu based off of those suggestions! 



Friday - Pancakes, eggs and bacon

Saturday - I have a school reunion that I’m hoping to convince the whole family to attend with me 🤣

Sunday - bbq chicken on the grill, roasted zucchini and baked beans 

Monday - Spaghetti Carbonara and French bread

Tuesday - shrimp and grits 

Wednesday- biscuits and gravy 

Thursday - Pasties

Recipe Fun - Potato salad

 I haven't shared a recipe in awhile so I decided it was high time to do so!  Plus this is a recipe I was sure I had posted before but when I went looking for it on my blog I couldn't find it on the list.  

Now, I know that everyone has a potato salad that they feel is the best but, guess what?  I think mine is the best!  It is actually a spin off of a recipe my sister-in-law Debby used to make,  I tweak it to be just what we liked and it remains a favorite to this day.  I think it originally started out has a warm German potato salad recipe and morphed into an American cold version but that could just be in my head. HA!  



Potato Salad

8 potatoes, peeled, diced

4-5 eggs, hard boiled and sliced

1 pound of bacon, cooked and crumbled

salt and peper to taste

Dressing:

1 1/2 cups of Mayo

1/4 cup of sugar

1/4 cup of Italian dressing


Cook the diced potatoes just until fork tender.  Combine the eggs, potatoes, and bacon in a large bowl.  Add salt and pepper.

Mix the three dressing ingreadients in a small bowl

Pour the dressing over the potato mixture while the potato's are still warm.  Mix well.  Place in a covered bowl in the refrigerator.  These are best served the next day but can be served while it is still warm as well. 

** I stir mine a few times as it sits in the fridge in order to mix up the dressing well and combine flavors.

Weekly Menu

 This week both boys go to camp!  My menu is always flexible during this week! 


Friday (7/10) - dinner out with Josh 

Saturday (7/11) - we have an Open couple Open Houses to attend today. 

Sunday (7/12) - Crockpot Fajitas before the boys head to camp.  Well, the guys get this while I have my once a year book club before we take the guys to camp!  🤪

Monday -Thursday (7/13-7/16) - Josh and.Nate are gone all week so we will have a mix of take out and easy meals 😊

4th of July Fun

 

I hope you all had a fun, relaxing 4th of July!  We did!  It's always nice when a holiday falls on a Saturday because you get to enjoy the weekend AND the holiday!  We did start our day out doing some cleaning/picking things up.  Last weekend we all worked in the yard together - this weekend we all worked in the house HA!  

We enjoyed a great cook out with my mom!  I made my homemade potato salad and a triple berry crisp.  We also had brats/hot dogs on the grill, corn on the cob (I can't wait for FRESH in season corn on the cob!), chips and mini-cupcakes.  It was such a great dinner!  






That was all followed by a very relaxing evening at home.  We had talked about going to see some local fireworks as a family but in the end all agreed that we did not want to go sit outside in the humid weather.  Instead we saw some out our windows and watch the 4th of July specials on TV.  

Our June was so busy I feel like the 4th snuck up on me and I forgot some of our normal traditions that I'm already making notes of for next year - T-shirts, Smoke Bombs, and Monkey Bread Muffins are high on that list!
