Welcome back to the most exciting post of the week ;-) There really isn't anything exciting to talk about this week so I'll just get right to our menu
Friday - Taco Night! Tonight I'm going to Make Del Taco Crispy Fish Tacos. This is something I've never made before but I love Fish tacos so I hope these are good! We'll have some Roasted Parmesan Green Beans and, of course, Chips and Salsa. (Nate would starve if I didn't have "Chips and Sauce" in the house!)
Saturday - We will get something somewhere ;-) The boys have been asking to go to a toy store for awhile so we'll either just take them up to Walmart to look around or if we feel like taking a drive, we'll go to Toys R Us. Either way, we'll get dinner somewhere (Maybe at the Chinese Buffet if we stay local!)
Sunday - Root Beer Pulled Pork Sandwiches. I will actually cook the pork on Saturday since it has to be in the crock for a long time; then we can just reheat it for dinner after church. With it we'll have Sweet Potato Casserole and Acorn Squash.
Monday - Homemade Veggie Soup - when I printed this, I thought it was new but after reading it I realized that it is actually the Weight Watchers Veggie soup HA! I might (if I remember) leave some of the pork from Sunday without BBQ Sauce and add it to the veggie soup to make it a little heartier for dinner.
Tuesday - Baked Parika-Parmesan Chicken, Cheesy Cauliflower Bake, Roasted Carrots and Rolls
Wednesday - Amish Breakfast Casserole (we never had it a few weeks ago!), Roasted Asparagus, and Fruit
Thursday - Pan Fried Pork Chops, Green Bean Casserole and New Potatoes and Rolls
Other Stuff: I've been working on trying to have some planned lunches/snacks for me. I am getting more creative with salads but sometimes I want something different. I found a recipe on Pioneer Woman for "Simple Sesame Noodles" that sound good. I'll make those on a day I make spaghetti for the kids. If this recipe is good, I think I can freeze the "sauce" and just take it out anytime I want this dish for lunch. For one snack Idea I'm going to make Cranberry-Pomegranate Sauce. Oh, and buy some Pomegranate's so I can snack on the seeds (they are work to prep but they are so good!).
I'll be honest, I'm not a super fan of Apple Pie. Don't get me wrong, if you make me one, I will enjoy it, especially with some good vanilla ice cream but, if you have 6 pies on the table, I won't pick apple. I found a recipe for "Dreamy Apple Pie" and really want to try it . . .so I will. It will either be good or not.
Pumpkin Cinnamon Rolls are also on the plan. I'd like to put them together on Saturday so we can have them for Breakfast on Sunday.
Finally, I've been wanting to try Pioneer Woman's Cinnamon Toast - so I'm planning it for this week. If I remember :-)
