 Fruit and Cream Cheese Breakfast Pastries 

Last week when I made the Quiche Lorraine Bites I also made these adorable little breakfast pastries. They have a wonderful flaky crust made from puff pastry, a yummy cream cheese center and fruit on top.  You could use any in season fruit - I obviously chose blueberries and raspberries.  I personally thought these were wonderful.  A little bit "fancy" and fun for sure.  They were super easy to pull together and stayed fresh for several days (verses drying out).  The only kicker?  My family didn't like them HA!  Well, that's not completely fair.  Darryl kind of liked them but he also told me he really doesn't like flaky crust.  He'd prefer these be made with crescent rolls or something more dough like and less flaky! 

All in all, I would make these again especially for a small gathering or a ladies group or even for my co-op!  One down side is that this recipe, using one package of dough (two sheets) only makes 8 pastries so you'd have to double or triple this recipe for a crowd which makes it a little more of an expensive treat!

Pensacola Beach Vacation Day #6

 After a very long, fun day on Wednesday, we decided to make Thursday our "day of rest and relaxation"! 

We all enjoyed sleeping in and having breakfast on they balcony.  We then headed to the pool for a few hours and enjoyed it to ourselves pretty much the whole time!  We played a fun game of water volleyball (our version!) and just enjoyed being together. 

Later in the afternoon we headed to the beach across the street from our hotel.  The waves were amazing and everyone had fun playing in the sand.  

We saw this guy hanging out on the light post while walking back from the beach. 

This is "our" pier that was closed for repairs due to the hurricane.  Hopefully next time we go we can walk out on it! 

These birds flew by our window every day and were amazing. 

Once back at our condo, we decided to order in and got pizza from a place that was supposed to be the best pizza this side of Italy HA!  It was good but . .. I've had better!  

We all enjoyed a quiet day of relaxation -- Isn't that what vacation is all about??

This past week I made dinner with some fun little foods and this was one of them. These little Quiche Lorraine's in phyllo shells are easy and fancy looking!  I only put bacon in some of them because Josh doesn't like bacon (I know, what is wrong with this kid!)

Now, let me keep it real.  I loved them.  The shell is flaky and crispy.  The filling is tasty.  Josh took one bite and said, "mom, why did you leave the paper on there?" LOL  He was pulling the outside layers off and digging the filling out.  Then Darryl took a bite and made the exact same face as Josh LOL  Not his favorte things but that's ok.  Why?  because I liked them !! :-) 

Pensacola Beach Vacation Day #5

 Welcome back to our Vacation!  Day 5 was a day of excursions!  After a few relaxing days we decided to have a full day of visiting some interesting places! 

We left our condo mid- morning and headed to Gulf Shores, Alabama.  Darryl and I have always wanted to visit Gulf Shores and, considering that we were technically 45 minutes away, we wanted to spend the day there! Now, in reality, it takes longer to get there because the main bridge to Pensacola is still shut down due to damage from a hurricane last year but it wasn't  "that" bad.  

Gulf Shores is beautiful.  We started with finding a great place for lunch. King Neptune's Seafood was amazing.  Actually, Josh wanted Domino's Pizza and Nate wanted McDonald's so Darryl and I enjoyed a fabulous meal by ourselves sitting on the patio of the restaurant.  The kids ate in the car (which was right next to us HA) and  enjoyed themselves very much! 

Once done with dinner we decided to take a drive to check out all of the houses on the beach.  Once we were done exploring, we found an amazing beach to stick our sand chairs and enjoy the ocean! 

The waves were amazing!  And the sand?  Oh my goodness.  It was like walking in flour.  

Once we left the beach, we stopped at the pier.  This was such a great find because one of the things Nate wanted to do was go out on the pier in Pensacola but it was closed due to damage from that same hurricane last year.  Well, this one made up for it! 

A fisherman had caught a sting ray.  It was pretty cool to see . .. and then they butchered it.  Nate was pretty intrigued by it all. 

 It's hard to see but there are sharks in this photo.  We watched some fisherman fishing off the pier and the sharks were circling.  Several times, someone would go to pull a fish out of the water and the shark would jump up and take their catch!  It was pretty cool 

Nate did not want to leave the pier!!  I could have spent an entire day just watching the fish! 

We did finally head back to Pensacola Beach after an amazing day away.   We made one final stop for dinner.  We were craving Mexican food so we search for what was "near us" as we were traveling home and found a place called Mariachi's Mexican Food and it was amazing!  Oh my goodness.  It is on our "visit again" list!

2021 Week in Photos #18

 This week held Memorial Day - yet it feels like Memorial Day was weeks ago . .. it was a long week!  On Tuesday . .. and Wednesday . . I thought it was Thursday.  On Friday Darryl got up and said, "Man, it's only Thursday!" HA!  Anyway, here's a look back at our week in photos! 

Saturday - We did outside work and started a project.  This is the "before" :-)  

He's such a cute dog . .. begging for food HA! (He didn't get any, don't worry!)

Sunday - Josh had a youth activity and we did more work outside (it was a perfect weekend for outside work!) 

We also burned our Christmas tree (The annual burning of the tree).  Once we take it down each year, it sits until it is fully dry so we can burn it - and it always makes quite the display! 

My little flower garden.  Nothing fancy - just some pretty flowers.  The lattice will get cut down and fill a space on the porch. 

Monday - Memorial Day!  We spent the day at my moms relaxing, enjoying lunch AND dinner and playing card games.  It was great day! (But not a single photo!)

Tuesday - Our first full day off of school . The kids slept in and played video games while I attended a Leadership Team meeting for our Co-op. 

Wednesday - I finally got around to taking our "last day" photos even though we officially ended last week! 

(Josh is stretching as much as he can to be even taller than he really is LOL  . .. which he is as tall as me now so that means he is taller than his AUNTS!!! 

Thursday - My mom took us out to lunch to celebrate the end of school! 

Friday - Friday School!  

This the board games class - they were making their own game.  Josh and Nate also are part of a Running Class where they track their miles run and then play games like Kickball. 

Finally, it was national donut day so, as Josh said, "We can't disrespect Donut day!" we got donut's thanks to Nana!  

What a great week!

 Can you believe it is June?  I can't.  I mean we are in month number 6 and I'm not really sure where months 1-5 went!  Maybe it's because we were buried with our noses in the books and we didn't do many extra things!  Who knows!

Saturday - We enjoy our weekly dinner at my moms! 

Sunday - Brats on the grill and potato salad 

Monday - Lemon Shrimp Alfredo, Asparagus and French Bread

Tuesday -Slow Cooker Steak fajitas, Salad and chips and salsa

Wednesday - Biscuits and Gravy and Cheesy Potatoes (Josh's request!)

Thursday - Chicken Alfredo and Garlic Bread
