January has been a weirldy busy month. We were buried in school trying to wrap up the semester, our co-op started and Darryl and I got really involved in music at our church "all of a sudden". So I haven't had a lot of extra time (or brain cells after doing school for hours upon hours) to focus on much else! This week we have some days off from school so I am hoping to get "caught up" a little and maybe get my plan in place for February! One thing that always stays constant is that we have to eat HA! The grocery store trip last week kept getting pushed ahead due to not having a vehicle but it is kind of amazing how much food you can use up in your house when you think you have "nothing to eat". I also did a small, quick pick-up order to get water and other important things like Doritos. (HA!) Anyway, this weeks plan is below and maybe I'll even stick to it this week!
Friday - We have our Co-Op again and I have found/learned that by the time dinner comes around I am done so it has to be really easy or we end up eating out. We are trying to not spend extra $ right now so it must be easy! This week it will be Chicken Pot Pies (nothing easier then just throwing them in the oven!). I'm always at a loss of what to serve with Chicken Pot Pie since it isn't quite enough to fill us up. Salad? Maybe a cheese ball and crackers?
Saturday - Dinner at my mom's!
Sunday - BBQ Pulled Chicken (super easy in the crock pot), fries (we love them in the air fryer), and a veggie.
Monday - Hamburger Strogenoff, Noodles, green beans, and crescent rolls
Tuesday - Dinnerly
Wednesday - Everyone goes their own direction for AWANA and Youth Group
Thursday - Dinnerly.
