Our Week in Photos #16

 As summer has slipped by and we slowly get back into our school routine we are more likely to be found at home than out and about so, our week in photos are not quite as exciting!

On Saturday, I took the boys to our local theatre to see a movie they wanted to see.
I will admit, this Lego movie is one of the most boring movies I've seen HA!  My kids loved it.  They laughed out loud and at one point Nate yelled out as he jumped out of his seat. "RUN RUN RUN!"

Sunday brought church and I had a choir concert right here in our home town!  It was nice not having to drive 45 minutes or more to a concert.

I signed Nate up for a math activity at the Library called Crazy 8's Math.  It is an 8 week program for kids in K-2nd grade.  Josh is a little bummed he can't participate but he gets to spend time at the library with me so that's almost the same HA!

Weekly Menu

I did manage to slowly shift my "groove" in meal planning last week to incooporate the need for a soft food diet for my husband, one semi-picky kid and one kid who is micro picky has "distingishing" tastes ;-) HA!  We ate a lot of Mac and Cheese and soup for a few days until I could figure things out.  So, this week, I'm trying to have a slightly better plan.

Friday - Balsamic Glazed Pork Loin, Mashed Potatoes, Broccoli, and Breadsticks (ok I only have two left and they are really for the kids HA!)

Saturday - I'm going scrapbooking all day so the boys will be well cared for between Nana and Darryl.  I'm sure they will get their favorite fast food for dinner :-)

Sunday - After church we'll grab something to eat before my book club.  We then have a small group gathering on Sunday night I'm planning on attending.

Monday - Amish Poor Man Hamburger Steak - this is a new recipe but it looks really good.  Baked and Sweet Potatoes in the crock pot and asparagus.

Tuesday - This is the light night for "Dinner out with Nana!" Can't believe she's heading for home!

Wednesday - We have to squeeze dinner in between Math club and AWANA.  I'm thinking taco bell since it is mornally quick eating.

Thursday - The boys have choir practice on Thursday nights now so dinner has to be either early or late.  I'm thinking Tacos are always good for nights light this.  We can eat before practice if we are hungry or after practice if we aren't.

Lunches - and a recipe

 First, I wanted to share a simple recipe that I used for several lunches last week.  It is a Pesto Pasta salad. 

Very simply, you boil pasta (bow tie is probably the best but I had a few boxes of medium shells in the cupboard so I used some of that).  Add some cherry tomatoes, halved, and some fresh mozzarella (I got the small little balls of fresh mozz - my favorite!!).  Mix in the pesto and boom - a perfect salad.  Next time, I would add some black olives and feta cheese to add just a little more flavor.

Now, here are some more samples of my lunches (You can stop reading if you don't care HA!)

 This is my go-to Chicken Salad served with some peppers, celery with cream cheese and a roll with butter. 
 Pickle Roll-ups (with pickles and cream cheese), peppers and celery, an orange and crackers.  
 I started using leftovers since my fridge was full - Left over pulled pork, a salad, and an orange. 
 More leftovers - Baked Potato with bacon, cheese and sour cream and a salad. 
Finally a tortilla pizza with a salad.  The sausage balls were a bonus because they had just come out of the oven and I love them so much! 

The past few days I've been focusing on using up leftovers in trying not to waste food.  Next week I want to plan more of these really good lunches though!

What I'm Reading

 This is what I'm reading! HA!  My mom and I had the opportunity to a book signing at our great local Christian book store.  My mom might have treated me to a few books so now I'm ready for a good snowstorm!!! 
 This is the author that we were able to hear speak.  This is a memoir of her life and events that took place in the great Grand Rapids area years ago while she attended college.  I'm looking forward to getting into this book. 
But first, I have to read this!  This is our book for book club which is meeting THIS coming Sunday and I have yet to start it!  Yikes!  

 Speaking of book club, this was our book last month and I really enjoyed it.  I've been waiting to watch the movie  . . . the kids are going to my mom's camper on Friday evening so I might actually have a chance to watch it! (Thanks to Amazon Prime!) 


These three books that all went along with book clubs . . have cracked them open yet HA!  Oops!  Oh well!

Pray for Las Vegas

I had a different post planned for today but in light of the recent events, I just wanted to stop and Pray. 

Darryl and I have been to Vegas twice.  I can picture the area of the shooting in my mind and it just breaks my heart that so many people are now faced with grief and those that survived really have to figure out how to move on. 

So, for today, just pray for so many who have been impacted.

September Goal Recap

I had planned to write up the recap of my September Goals but . . ..



It's been a long, but good day and, as I sit here this evening watching some football, I've realized how tired I am and, instead of writing details, I'm going to bed :-)  Today included church and Sunday School, a quick lunch, and then I had a concert today which is exhausting! 

Did I accomplish some of my goals, yes.  Did I also not accomplish some, of course!  October is a new month and it is time for new goals but for tonight, it's time for sleep!
