Something Yummy - Fruit Pizza

Years ago I sold Pampered Chef and I really enjoyed it.  I love the recipes and I love the product.  This recipe was one of the go to recipes I used when I did demo's at peoples homes.  It was easy, quick and showcased quite a few products.  This did not disappoint!  Such a simple yummy dessert. 

Ingredients

1 package refrigerated sugar cookie dough
1 package cream cheese, softened
1/3 cup sugar
4 cups fruit (strawberries, kiwi, bananas, peaches, blueberries or raspberries

Directions
1.  Preheat oven to 350 degrees. For crust, shape cookie dough into a ball.  Place dough on a pizza stone or a cookie sheet; flatten slightly with palm of hand.
2. Using light floured rolling pin, roll out dough to 12" circle about 1/4 inch thick (note, if using a cookie sheet - make it into a rectangle instead)
3. Bake 18-20 minutes or until light golden brown.  Remove pan from oven to cooling rack; cool 10 minutes.  Carefully loosen cookie sheet from baking stone.  Cool Completely.  (Note: I used parchment paper on my stone so I didn't need to loosen it)
4. For topping, combine cream cheese and sugar in small bowl; mix well.  Spread mixture evenly over top of cookie.  Arrange fruit over cream cheese mixture; refrigerate.
5. Cut into 16 wedges OR cut into smaller squares.

What I'm Reading

I found a really great new series because, well, the first book was free on Amazon (Not sure if it still is at the time this posts but you can check!)






This series is a fun mystery series that takes place in England.  I found that I couldn't put each book down and couldn't wait to read the next book in the series.  There is a new book expected out in this series soon!

I also continued on with the Aloha Series and read the next book.  I must be really into mysteries right now because this is also a mystery series.  This one is a little more intense though and keeps you on the edge of your seat waiting to see what happens.  I will say that it does follow the protocal of "the guy always gets his girl" in the end which is good but very perdictable :-)

A Few of my Favorite Things

I like to challenge myself with this post to NOT post more than one food item.  :-)

 Even though I've only eaten from a food truck once, I love this show.  If we lived closer to the city, we'd eat at them more.  I think the food always looks so amazing! 
 Yogurt is my thing lately HA!  This is a French style yogurt that comes in glass jars.  It's really good - think and creamy and not sour at all.  My husband things its gross though !! 
Yep, another TV show.  This show always amazes me with 1) how bad people cook and 2) How they learn stuff so fast.  They must prep them all week on some things because some of those cooks can do things I would never think to try!

Remembering 9-11

I would be remiss if I didn't take time to remember 9.11.2001.  It is a day that forever changed our country and change most of us that sat glued to the TV for days as the story unfolded.  Those images are still burned in my mind.

So today, in the midst of your daily life, take time out to remember the events that unfolded and pray for those families who lost loved ones that day.

Our Week in photos #12

This week included a holiday which brought lots of fun!

On Saturday I took the boys to a movie first.
The boys have been asking to see a 3D movie but up until now there really hasn't been one that I felt comfortable taking them too.  One of the theaters in town does a free movie each week and it just so happens that this weeks movie was "How to train your Dragon 3D"  Perfect!  The boys were pretty impressed but it wasn't quite "scary" enough for them - they said they didn't jump out of their seats like they thought they would HA!  After the movie, we headed to the campground to swim for awhile.  Later in the evening I realized that it could be the last Wagon Ride of the Season so the boys and I zipped up to the campground just before 9:00 and caught the last ride of the day!  Whew!

Sunday - Church, Swimming, and a cook-out!
 After church and lunch, the boys and I headed to the pool for a few hours.  It was the busiest that we had ever seen it!  Whew!  Perfect weather and the pool was near perfect too.  After running home to change, we headed back to the campsite for a cookout!  Lots of good food - Hotdogs, Potato Salad, Cucumbers in vinegar, baked beans, and, of course, S'mores!  This time I brought Grasshopper Cookies (like Girl Scout Thin Mints) and used those to make S'mores.  Best. Thing. Ever.!



 The boys partcipated in the Holiday Parade around the campground again - they were the only kids who rode their bikes! 
 Then came the bottle flipping compititoin between the boys and Darryl. 


My mom and I enjoyed the campfire while the boys all played! 
We enjoy having Nana close by in the summer!

After a fun filled weekend, we started school on Tuesday.

And, that has pretty much consumed my life HA!  For real.

We started Friday school this week too.  It's a fun but tiring day for all of us!


 Nate took a class on Endangered Animals.  


 Josh signed up for a baking class and got to decorate this cake today. 
Both boys signed up for a class based on Star Wars Jedi.  They got to build with Legos ;-)

Weekly Menu . . .And . . .it's fall

Ok, it's not really fall but school has started, football is starting and cooler weather is ahead.  This week, I've returned to Pocket Change Gourmet for my menu inspiration for this week.  I'm tired of planning menus and this site actually is pretty close to what we like to eat so, at the very least, it directs me to recipes we like anyway but I just haven't used.

Friday - The boys and I are heading to Linden so we will grab something on the road.

Saturday - I don't know.  I'm non-commital because we are returning from Linden and I'm not sure what time we will get back.

Sunday - Football Sunday!  My husband has a concert in the morning so I think we will grab something on the way home so we can jump right into football!!  I'm thinking of ordering a Pizza for dinner . . .

Monday  - Pancakes, Fried Potatoes, and Bacon

Tuesday - Tacos

Wednesday - AWANA starts this week so it's simple food .. . . probably just mac and cheese

Thursday - Darryl won't be home for dinner so I don't tend to cook a big meal - maybe leftover Tacos or frozen pizza.

What a boring week of food HA!  AND even though I looked at the menu at Pocket Change Gourmet, I didn't use much of it, did I?  Geesh!
