How Much Do You Love Kohls?

 I learned something new at Kohl's today!  I've always know that they have the most incredible return policy but today it just got better.  Once, I returned two shirts that I had purchased for gifts and than didn't end up needing them (I bought too many!).  I returned them over a year later with a receipt and got my money back.  I've returned stuff in the past without a receipt and just got the current price.  Today, I returned an outfit I had bought for Nate this past summer.  It really didn't fit his personality after I bought it for him.  I could not find my receipt so I knew that I would get less than half of what I paid for it but that was better than nothing.  Much to my surprise, there is something new since I last returned something.  Since I bought it on my Kohl's card, the clerk was able to scan my Kohl's charge card and than scan the tag on the outfit - it came right up and I was credited the full amount :-)  Isn't that awesome?  Kohl's  is the one card I use because you get such awesome savings when you use it on top of the coupons a lot of times (than we pay it off!) and now I know i have the ease of doing returns with a receipt if I misplace it.  Add to that the fantastic deals you can get there and it is my favorite place to shop.  I picked up a few things today and actually saved $10.00 more than I spent due to the sales.

Today I am Thankful for the Parents!  My parents are great!  They are so willing to help us out and love to watch our kids for us so I can have a day out or we can have a little break.  They have always been super supportive of  my brothers and I and are a great example to all of us.

Craziness - but Life is Good!

This week has been a bit crazy.  I started babysitting for a friend's little boy on Wednesday.  This is something that has been in the works since January, if you can believe that!  When she found out I was staying home with my boys she asked if I would be willing to watch her baby once she returned to work . . in November!  I couldn't believe it.  It was what I had hoped for and it landed in my lap!  So, this little guy was born August 13th and the 12 weeks passed quickly!  Throwing a third little boy in the mix has kinda thrown our schedule for a loop.  Trying to shift a few things around to try and get everyone up, fed, teeth brushed, and happy is taking a little getting used to but it is working.  He is great; a routine baby actually . He is like clockwork!  So I am just shifting Josh and Nate's schedule slightly to make it all work.  The other thing is my time - I had my schedule pretty well set for teaching time with the boys as well as time to get my projects done.  Right now, those things have taken a back seat but I hope to start working those things back in next week. 

Yes, I love blogging and I'm not stopping :-)  I've learned the joys of scheduling posts so I can write several at once - usually in the evening while relaxing and watching TV but this week even that has lagged a little.  I've been a little tired to really think through the post ideas I have written down.  Plus with two 30 day challenges going on, it is taking up my normal post time.  Once one "expires" here in a few days, I'll have crafts, ideas, recipes and more to post!  (I know you can't wait!!)

Otherwise, we are doing well.  Darryl's job is still questionable due to the death of the owner recently and the change of hands that will occur based on the will.  We are just waiting on God.  It is his plan.  We have gotten involved again in our church praise band and are enjoying that too.  The boys are doing great!  Josh just went to his 2 year check-up and his perfectly healthy and Nate is my dare devil!!

That's enough "musing" for one night!  Just wanted to share what's going on here :-)

30 Day Blog Challenge - Day 24

Day 24 - Something you have learned

Wow.  Well, I've learned a lot in life that is for sure!  But these came to mind first:
1) Nothing sounds better than hearing a baby laugh out loud
2) God does always answer prayer - just not always in our time or the way we want
3) It is more fun to watch TV with my best friend (aka my husband) than with anyone else
4) For every one great recipe I try, there will be 10 failures ;-)
5) Once a teacher, always a teacher!!

Ham and Cheese Quiche

Tonight's meal was a total, 100% success.  I've always liked Quiche and try new recipes periodically.  A lot of them end up being a little greasy from the meat or a little watery.  In my husband's words "This is like something they would serve at a fine restaurant".  That is quite a complement. 

Ham and Cheese Quiche

1 pre-made pie shell
6 eggs
1 1/2 cups heavy cream
1 cup diced ham
1/4 cup diced onion
1 cup freshly shredded cheddar cheese
salt/pepper

Preheat oven to 375

Spray pan in a small pan and saute onions with ham for approx 6 min.  Put the ham and onions in the bottom of the pie shell; top with shredded cheese.  In a separate bowl, mix the eggs, cream, salt and pepper until well blended.  Pour over the top.  Bake 35-45 minutes until set (When you take the quiche out of the oven, the middle of the pie should not jiggle)

** A couple of notes:
You really need a deep dish pie crust.  You can either buy a frozen one or pie the refrigerated crust and put it in your own pie pan.
I purchased a package of diced ham in the meat section - it made this a super fast supper!
My husband suggested serving fried potatoes/hash browns with this along with the muffins I made.
