Kids Lunches

One of the things I have the hardest time with is feeding my kids lunch.  I've had a hard time with this ever since Josh started feeding himself.  When "all" I had to do was puree up some fruits and vegetables, freeze them and than throw a few ice cubes in the microwave, it was kinda easy, I just admit.  Than, Josh figured out he could feed himself and eating off a spoon in my hand really wasn't that fun anymore.  Nate has reached that stage - he wants to feed himself everything so again, I'm trying to figure out what to feed them!  I'm getting tired of feeding Josh cheese and crackers, PB and J, Balonga, and Quessidillas.  I got creative a few weeks ago and made Chicken Nuggets but it just isn't enough.  Now that Nate is getting closer to eating the same things as Josh, I really feel the need to plan fun, healthy, interesting lunches to my boys.  Thrown into the mix is the munchkin I babysit for - he is still a year off from eating "real" food but I'd like to have my plan in place well before than. 

Well, in one of my blog searches today - clicking on all those linky parties - I came across one awesome blog!  Crouching Mother, Hidden Toddler shows off her lunches that are just unbelievably creative but also easy - they just take some planning.  I have loved the "Muffin Tin Monday" concept for awhile but just haven't done it and she also uses some other neat lunch "plates" that I'm thinking of picking up for my boys too.  Here are just a few samples of the lunches she does:

So I'm inspired :-)  I'm also going to research some other kid cookbooks too.  My plan is to start this new meal planning in January - I need time to plan, wrap my mind around this whole idea, and than not OVER plan as I'm known to do!  I also want to get some muffin tins and some of these other cute lunch "boxes" for both of my boys.  Plus, by January, Nate will be eating more so doing lunch for two plus me will be a little easier - instead of making 2-3 differant things each day, I think I can make these work for all three of us.

30 Days of Thankfulness

Today I am thankful a husband who works very hard.  He works two jobs, 80+ hours a week so I can stay home and some weeks, he works 7 days a week for us.  How can I not be thankful for that? He works a very, very physical job Mon-Thursday, 12-14 hours a day.  Than he gets a "rest" on his other 2-3 days of work while driving around town - but he never stops.  If he wasn't willing to do this - I wouldn't be home with our boys.

Yes, I should have posted this yesterday - I thought about it all day but than never had a chance to post it.

This is a silly one but it is true!  I'm thankful for my new phone :-)  AND I'm thankful for "free" phones every two years!  Yep free!!  I've had Verizon since before it was Verizon - back when AAA gave out phones to their members.  When Darryl and I got married he took over my phone but the battery didn't even stay charged . . he made a phone called and we learned about the "new every 2" thing and got our first new phone.  A few years later we added a line and now we just wait for that 2 year anniversary so we can pick out the best phone we can get for free :-)  This time mine has the full keyboard, some awesome fonts, and great ring tones.  I'm so excited to have it !

Great Learning Tools

We are in the middle of a two week lesson schedule about Thanksgiving!  We are having fun singing songs, reading stories and learning here and there.   Today I wanted to share with you some neat things I've come across and that my kids enjoys.

A favorite DVD in our house right now is one of the Praise Baby DVD's. 
Another friend had mentioned to me how much his twins enjoy the Praise Baby collection.  I kinda brushed it aside but when I saw it on sale for $5.00 at Family Christian Store awhile ago, I picked one up.  I wish I had listened to him and bought it when Josh was first born.  I love it and the kids love.  The kids love the colorful pictures of other babies and animals that come up on the TV; I love the music.  I put it in one day and Josh sat in the recliner, kicked back, enjoying the DVD.  Than he got up and played while listening to the music.  I will be getting more of these as soon as I can - I don't really like having the TV on a lot during the day but these DVD's are my exception.  The boys seem to be more relaxed when it is playing.  Check out the entire collection here

This is one of the books we are using for our Thanksgiving lessons.
I found this book also at the Family Christian Store when I stopped in one day to check out their latest sales.  Here's a review of the book that I agree with 100%!

Counting our blessings is what Dr. Mary Manz Simon's My Basket of Blessings (and many reasons to thank God) is all about. This book is die cut to look like a basket, and each page has die cut images of items in the basket, giving a fun layered look. Adding to the attractive appearance are many sparkly images.



The text is well written rhyme and explains how the items in the basket remind us of God. For example, the juicy apples "will never match the sweetness of God's love for me" and the kitten "reminds me of God's caring and of his gentle touch." There's also a scarecrow to remind that God made us, a pumpkin pie, with it's wafting scent, to remind us God's gifts are everywhere, a squirrel whose "chatter now reminds me to share God's love with you," and a teddy bear, who reminds us bears sleep in deep caves and that God is with us day and night. The book ends:

"My basket overflows now the blessings from above.
These precious gifts around me remind me of God's love!"

Josh loves the cutouts and the texture of the pictures (they feel like sandpaper a little).  He loves to flip through the pages and see the great illustrations - I am so glad I bought this book!
This would be a great book to pick up and add to your bookshelf for your children or in your classroom

For all of you Christian School Teachers, Sunday School Teachers and Mom's who like to teach - here are two great scripture memory sites:
1) hubbardscupboard puts verses to "tunes" to make them easy to learn by singing them to some well known children's songs as well as Bible Verse Copy work, Strips, and Coloring sheets. 

2) childrenschapel has lots of coloring sheets to go with the verses on their site.

One of my favorite sites, Oopsey Daisy, has posted her "T is for Thanksgiving"  packet.  Check it out, download it, print it and use it!  She is considering adding a fee for $0.99 which I think is totally reasonable.  She puts a ton of works into these packets.  How do I know? Because I started trying to pull my own stuff together so I didn't feel bad for using hers without the work.  I can spend hours and hours each week searching for the best ideas.  It is great to have it done for you - and that small cost is really just a thank you for her hard work.  With that said, though, the Packets she has already done will remain free so check them out!

One last thing - our video this week is "You Are Special" based on the book by Max Lucado. 
I had forgotten on plainly simple it is in teaching kids that they are created special and that nothing else anyone says really matters - only what our creator says matters.  Isn't that a great reminder for adults too?  The more time we spend with God, the less what others say and do matter.  Josh enjoyed it the video today . . I must confess though, those wooden people are a little freaky looking ;-) 

Right now, though, he is engrossed in the Praise Baby DVD - he smiles and laughs with it; and the music is so relaxing - seriously, you need to get one of these!!

Bosten Cream Pie Mini's

Don't these look awesome?  They are!  This picture is from the Kraft Website but I have a few too! 

What You Need
1 pkg. (2-layer size) yellow cake mix
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 cup cold milk
1-1/2 cups thawed COOL WHIP Whipped Topping, divided
4 squares BAKER'S Semi-Sweet Chocolate

Make It
HEAT oven to 350ºF.

PREPARE cake batter and bake as directed on package for 24 cupcakes. Cool completely.





BEAT pudding mix and milk with whisk 2 min. Let stand 5 min. Meanwhile, use serrated knife to cut cupcakes horizontally in half. Stir 1/2 cup COOL WHIP into pudding; spoon onto bottom halves of cupcakes, using about 1 Tbsp. for each. Cover with cupcake tops.






MICROWAVE remaining 1 cup COOL WHIP and chocolate in small microwaveable bowl on HIGH 1-1/2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended. Let stand 15 min. Spread onto cupcakes. Refrigerate 15 min. before serving. Refrigerate leftovers

30 Days of Thankfulness

Today I am thankful for quiet mornings.  I enjoy the hour or two I get in the morning when everyone is sleeping.  I get up with my husband, sometimes between 5 and 5:30, make his lunch and than snuggle back in and watch some news until 6:00.  I than have from 6-7:15 to get ready for the day, relax, have my devotions and just enjoy the morning before the little munchkin arrives.  Normally he is still sleeping so than I have until one wakes up, normally around 8:00 to get some things marked off my list.  All that time really helps my day run smoothly and as I sit here this morning enjoying the calmness, I am thankful.  Plain and simple.

Today I an thankful for  . . .my soft bed!  Today was a really long day - not a bad day at all - just long, lots of things going on and we seemed to be going non stop (even no naps for two little boys!).  It was so nice to fall into bed (last night since I forgot to post this I was so tired!), crawl under the covers, snuggle in and drift off to sleep!
